Veg mac and cheese

Recipe

Ingredients

Serves 4 adults or 11-18 toddlers

Total cost - £8.56 or £2.14 per portion

  • 200g broccoli - £0.79
  • 1 courgette – £0.56
  • 1 leek - £0.70
  • 300g macaroni pasta - £0.72
  • 50g unsalted butter - £1.69 (for whole block)
  • 25g plain flour - £0.80 (for whole bag)
  • 1pt semi skimmed milk - £0.90
  • 175g cheddar cheese - £2.40 (for whole block)

Method

  1. Chop broccoli and leek into into bitesize pieces and grate the courgette.
  2. Measure out the butter, flour and milk and set aside for later. This will make your cheese sauce.
  3. Put the broccoli in a steamer over boiling water if you have one. Alternatively place in a microwave proof dish with 2 tbsp of water and cover with cling film, cook on full power in the microwave for 2 minutes or until beginning to soften. You will continue to cook this later, so it does not need to be fully soft.
  4. Heat a saucepan with boiling water. Add the pasta and cook for 8-10 minutes or until soft. Drain and set to one side for later.
  5. Heat the butter in a medium saucepan, add the leek and cook for 2 mins. Add the grated courgette and cook for a further 1 minute. Stir in the flour and cook for 1-2 mins more.
  6. Take the pan off the heat and gradually whisk in the milk. Return to the heat and bring to the boil, stirring all the time. Simmer for 5 mins until the sauce begins to thicken.
  7. Take the pan off the heat and stir in the broccoli, then the cheese. This is your cheese sauce.
  8. Stir the pasta into the sauce and serve.
