Stir Fry

Ingredients
Serves 4 adults or 6-9 toddlers
Total recipe cost – £12.29 or £3.07 per portion
- 200g dried egg noodles - £1.15
- 2 cloves garlic – £0.39
- 1 small orange, juiced - £0.30
- 2 x low sodium OXO vegetable stock cube – £2.40 (to buy 12pck)
- 350g skinless turkey breast £4.40
- 5 spring onions £1.00
- 1 orange or yellow pepper £0.55
- 1 carrot - £0.10
- 150g handful of mushrooms - £1.00
- 150g sugar snap peas £1.00
Method
- First, slice the spring onions, pepper, carrot, sugar snap peas, garlic and mushrooms.
- On a clean board, slice the turkey breast into bitesize strips.
- Next, squeeze the juice of 1 orange. Dissolve stock cube in 150ml water and combine with orange juice mixture. Set to one side.
- Boil a pan of water. Add noodles and cook for 6-8 minutes or as advised on the packet. TIP: If you prefer, leave out the noodles and cook 200g long grain rice to serve with the stir-fry.
- Heat 1tbsp of oil in a wok or large frying pan. Add the turkey and stir-fry briskly for 4-5 minutes. Add the spring onions, pepper, carrot, sugar snap peas, garlic and mushrooms. Stir-fry over a high heat for another 4-5 minutes, until the turkey is cooked. The vegetables should remain crisp and crunchy.
- Give the orange juice mixture a good stir, then add it to the stir-fry and cook for a few moments until thickened. Drain the noodles well, then add them to the turkey mixture. Serve at once.
